I. Fundamentals Course


This course will teach you all the basics and then some so that you too can create delicious and nutritious raw foods for yourself and your loved ones. In one day you will learn the ancient secrets of preparing food in its natural state and be able to carry over the bliss to your daily life.

Drawing from his 14 years making raw and living foods and a lifetime of culinary experience, Rod Rotondi, owner/founder and executive chef of Leaf Cuisine, SoCal’s most popular raw food, will introduce you to the philosophy, science and practicalities of moving towards a raw food lifestyle. He will discuss specific health benefits, transitioning, fasting, sprouting and setting up a raw foods friendly kitchen. He will demonstrate how to make nut milks, smoothies and hummus and answer questions. Rod will teach you the secrets to sprouting, dehydrating, dressings, dips, soups, salads, entrees, desserts, crackers and so much more.

This course is practical and hands on. Rod dispels the myth that raw foods are difficult to make, showing you how to integrate raw food preparation into your lifestyle. You will learn how to open coconuts, roll collard green wraps, make nori rolls and much more.

CHEF ROD ROTONDI

Author of Raw Food for Real People, (to be published by New World Library in September), Rod has been teaching and preparing raw foods for 15 years. A tireless traveler and culinary eclectic, Rod has used his unique experience and perspective to translate world cuisine into delicious raw, organic, and vegan offerings. His teaching approach is pragmatic, non-judgmental and fun. He teaches raw foods as part of a conscious lifestyle.

Leaf Organics restaurants and packaged foods (which are distributed to natural food retailers throughout California) are the result of Rod’s dream to make it easy for people to eat truly healthy food.

Changing the world one bite at a time has become Rod’s approach to social activism. “Everyone has control over what they put in their mouth and these choices make a huge difference for our shared environment- our biosphere, as well as our individual environments- our bodies! Choosing organic, vegan raw foods is not only supporting our individual bodies with optimally nutritious foods, but supporting the growth of the whole organic and vegan industry- basically, our health and the health of our planet.”

Rod’s dream was to create an inclusive eatery, one so affordable and delicious that people would eat there daily and make a positive change to their lives. So he brought his concept to Los Angeles and thus was born Leaf Organics, the first certified organic (QAI) restaurant. His restaurants receive rave reviews and a steady stream of celebrities including Andre 3000, Woody Harrelson, Ali Larter, Alicia Silverstone and Phil Jackson.
